Written ByChris Cruz Low Cal Meatloaf Recipe- August 20, 2010Ok everyone I wanted to put up what we made for dinner tonight that was filling, low on calories and tasted great. The dinner recipe was Meatloaf, Mashed Potatoes and a Salad all for 573 calories. Here are a list of what you will need and how the calories break down. Meatloaf Recipe 2.5 lbs - 93/7 Ground Turkey [1700 calories] 1tbsp – Worcestershire Sauce [15 calories] 1/2tsp – Sea Salt [0 calories] 1/2tsp – Ground Pepper [2.5 calories] ½ cup – Green Onions (chopped) [32 calories] 1tsp – Minced Garlic [15 calories] 2 cups – Bread Crump’s [180 calories] ½ cups – Skim Milk [45 calories] ¼ cups – Egg Beaters [30 calories] ½ tbsp – Dry Basil Leaves [3 calories] ½ tbsp – Dry Rub Sage [3 calories] 1 Jar – Delallo Roasted Red Bell Peppers in Olive Oil w/ Garlic [90 calories] 3 tbsp – Ketchup [45 calories] COMBINE ground turkey and next 5 ingredients; set aside. Now COMBINE bread crumps, milk, egg beaters, Basil and Sage. Whisk until all ingredients are combined. PLACE whole jar of roasted red peppers into a food processor and blitz until is like a sauce, strain off all the juice and oil. STIR meat mixture, egg mixture and roasted peppers, put mixture into a loaf pan. PREHEAT oven to 350° cook meat loaf for 1hr 10min (you can cover with foil if you like but not needed) Pull Meatloaf out and cover top with ketchup (optional) and replace in oven for 10min. Use a meat thermometer, the temp should read 155° let stand for 10min after pulling it out. CALORIE TOTAL 2160.5 this recipe calls for 8 servings which breaks down to [270 cal per serv] (Low calories bread crumps; use 45 calories per slice bread take 4 slices add to food processor and blitz until you get bread crumps.) Now if you want to make a full meal out of this for dinner then here is what I do. I use instant mashed potatoes (Idaho potatoes) which are 80 calories per serving unprepared. If you use light butter and skim milk the mashed potatoes will be 153 calories per serving. We also have a salad with this but we buy the salad kits sold at Meijer’s called GARDEN CUTS and we buy the cosmopolitan which if its two people comes out to 300 total calories which is 150 calories each for me and Sarah. So in total this meal comes down to 270 calories for the meatloaf, 153 calories for mashed potatoes, and 150 calories for salad which equals 573 total calories for the meal.
